1.5 kg Pork Ribs 1 cup Beef Broth Salt and Pepper SAUCE 1/3 cup Olive Oil 1/4 cup Sesame Oil 1/4 cup Soy Sauce 1/4 cup Mirin Seasoning 7 Chilhuacle Chiles SWEET POTATO CHIPS 2 Yellow Sweet Potatoes Oil Salt INSTRUCTIONS 1. Place the ribs in a baking dish with a little beef broth, season with salt and pepper. 2. Bake at 150°C (300°F) for 3 hours, basting occasionally with the pan juices. 3. In a saucepan, combine all the sauce ingredients and reduce. 4. Blend the sauce with the chiles and set aside. 5. For the sweet potato chips: peel and thinly slice the sweet potatoes. Fry in hot oil, drain excess fat, and sprinkle with salt. 5. Once the ribs are cooked, serve and drizzle with the chilhuacle chile sauce. Accompany with fried sweet potato chips.
