This time, President S participated in a Kyoto sake brewery bus tour. "Making sake with rice meant for eating..." He was left speechless by the honest thoughts and determination revealed by a Kyoto sake brewer. In the first part, we visit two unique sake breweries. ■ Shirasugi Sake Brewery: A challenging sake brewery that makes sake using only rice meant for eating, which is rare even in Japan. ■ Ikeda Sake Brewery: A small sake brewery that focuses exclusively on junmai sake, brewing sake using only rice, koji, and water. We directly hear from the sake brewers about their thoughts, commitment, and struggles in sake brewing, things that are usually not possible to hear.
