How much meat is actually in it, what's in the marinade, which has the most "chemicals," and which option is the least bad. In this test, I break down ready-made pork necks—no marketing or bullshit. The key takeaways: the prettier the marinade, the poorer the ingredients; you're buying meat or water with seasoning; the absence of curing salt doesn't necessarily mean a good product; and "flavoring" often replaces real spices. What to look for: the percentage of meat, the presence of sugar and glucose, thickeners like xanthan gum or carrageenan, and flavorings instead of spices.
