Delicate cottage cheese cake 🧁 ▫️Ingredients: • Eggs - 2 pcs. • Cottage cheese - 200 g • Sour cream or yogurt - 150 g • Flour - 100 g (+1 tbsp cornstarch) • Coconut oil - 2 tbsp / approximately 25-30 g • Baking powder - 1 tsp / approximately 4-5 g • Vanilla - to taste • Sweetener or sugar - to taste If using rice or whole-wheat flour: 100 g flour + 1 tbsp cornstarch. If using regular all-purpose, starch-free wheat flour: Use approximately 110–115 g of flour (110 g for thick curds, 115–120 g for moist curds) ▫️Preparation: 1. Gently mix all ingredients until smooth. 2. Let the dough rest for 5–7 minutes. 3. Place in a lightly greased or parchment-lined pan. 4. Bake at 175°C / 350°F for approximately 35–45 minutes. Baking time may vary slightly depending on the pan and oven, so it's best to test the doneness with a wooden skewer: it should come out without any raw dough.
