Perfect for tea time, holidays, or a cozy family dessert! 📌 Servings: 10 ⏱️ Preparation Time: 40 minutes 🔥 Baking Time: 65–75 minutes 🌡️ Oven Temperature: 170°C (338°F) 📏 Baking Pan Size: R 21 cm or 19 × 29 cm 📝 Ingredients 🔹 For the Dough: 260 g all-purpose flour 75 g powdered sugar 1 egg 100 g unsalted butter, softened ½ tsp baking powder A pinch of salt 40 g semolina 1 egg white (for brushing) 🔹 For the Filling: 3 apples 50 g raisins 50 ml warm water 🔹 For the Yogurt Sour Cream Filling: 200 ml plain yogurt 200 g sour cream (15%) 2 egg yolks 100 g sugar 25 g cornstarch 👩🍳 Instructions 1. Prepare the Raisins Rinse the raisins thoroughly, pour warm water over them, and leave to soak for 20–30 minutes. Drain and pat dry. 2. Prepare the Dough Sift the flour and mix with baking powder. Add powdered sugar and salt. Incorporate the softened butter and rub into fine crumbs. Add the egg and mix until the dough comes together. Knead lightly and form a ball. If needed, add a small amount of cold water. Divide the dough into two parts, one larger than the other. 3. Form the Crust Roll out the larger portion into a thin sheet. Line a parchment-covered baking pan (19 × 29 cm) with the dough, forming 3–4 cm high edges. Place the pan in the freezer while preparing the filling. 4. Prepare the Apples Preheat the oven to 170°C (338°F). Peel the apples, cut them in halves, and remove the cores. Fill each cavity with the soaked raisins. 5. Assemble the Pie Sprinkle the crust with semolina to absorb excess moisture. Arrange the apple halves cut-side down. 6. Prepare the Cream Filling In a bowl, combine the yogurt, sour cream, sugar, egg yolks, and cornstarch. Mix until smooth and homogeneous. Pour the filling evenly over the apples. 7. Decorate the Top Roll out the remaining dough, cut it into small pieces, and arrange them randomly over the pie. 8. Bake Bake in a preheated oven at 170°C (338°F) for 50–60 minutes. Remove from the oven, brush the top with lightly beaten egg white, and bake for another 15 minutes until golden brown. 9. Cool and Serve Allow the pie to cool slightly before slicing.
