CREPES 250 g wheat flour 4 eggs 600 ml milk 1 pinch of salt 3 tablespoons sugar 60 g melted butter SABAYON 8 egg yolks 100 g sugar 100 ml white wine CUSTARD 1/2 L milk 1/2 L whipping cream 120 g sugar 1 vanilla pod 7 egg yolks 100 g cornstarch 200 g peanut butter 200 g strawberries METHOD 1. For the crepes: Place all ingredients in a blender. Blend and let it rest. 2. Using a nonstick skillet, make the crepes and set aside. 3. For the custard: Mix the milk with the egg yolks and cornstarch. 4. In a saucepan, heat the cream with the vanilla until it comes to a boil. 5. Pour the milk and cream mixture and stir until thickened. Remove from heat, add peanut butter and quartered strawberries. 6. Spread on a baking sheet and let cool slightly. 7. For the sabayon: In a double boiler, place the egg yolks and sugar and beat until the yolks increase in volume and become foamy. Add wine and continue beating until you obtain a creamy mixture. 8.
