This recipe is: ✔ High protein ✔ Low carb ✔ Keto-friendly-ish ✔ Family friendly ✔ Perfect for meal prep ✔ Great for cozy dinners ✔ Easy to customize Whether you’re looking for: easy chicken thigh recipes healthy casserole recipes low carb dinner ideas easy cabbage recipes creamy chicken bake recipes keto comfort food gluten free casserole recipes high protein meals easy weeknight dinners …this recipe checks all the boxes. 🧀 Ingredients: Beef bacon: 10 oz, 280 g One medium onion, diced Mushrooms: 8 oz, 225 g One small cabbage, chopped Garlic: 3 cloves, minced Salt, onion powder, garlic powder & Italian herb blend: 1 tsp of EACH Olive oil: 1 - 2 tbsp Boneless skinless chicken thighs: 1 3/4 lbs, 800 g Seasoning for chicken: salt to taste onion powder and garlic powder: 1 tsp of EACH Shredded mozzarella: 2 cups, divided Grated Parmesan: 2 tbsp ( for topping) Garnish with chopped chives or parsley Alfredo sauce: cottage cheese: 1 cup, 210 g Grated Parmesan: 1/2 cup, 50 g Garlic: 2-3 cloves, minced Milk : 1/2 cup, 120 ml Italian herb blend: 3/4 tsp Onion powder & garlic powder: 1/2 tsp of EACH A pinch of salt and pepper to taste 🕰️ Timestamps & Instructions 👩🍳 0:00 Add the cubed bacon to a heated Dutch oven or a deep skillet over medium high heat and cook for 4-5 minutes or until crispy. Then transfer it to a paper towel lined plate and discard half of the drippings. ( if there’s too much) 1:01 Add the onions and sauté for 4-5 minutes, until a bit golden. Next, add the mushrooms and cook for 4-5 minutes until a bit golden and the moisture cooks off. 2:28 Stir in 3 cloves of minced garlic and cook for 30 seconds to a minute, until fragrant. Add a splash of olive oil if the skillet looks dry and toss in the cabbage. Cook for 10-12 minutes, stirring occasionally. 3:03 In a mini food processor, blend all of the Alfredo ingredients together until smooth and set aside for later. 4:22 Pat the chicken thighs pieces dry with paper towels and season with salt, onion powder and garlic powder and toss to coat. 5:03 Season the cabbage mixture with salt, Italian herbs blend, onion powder and garlic powder, give it a stir, then transfer the mixture into a 9 by 13 baking dish. 5:46 Add a drizzle of oil to the same skillet and sear the chicken for 4-5 minutes on both sides. Then transfer them to the baking dish. 7:00 Add the Alfredo sauce along with one cup of shredded cheese and mix everything well . 7:36 Top the casserole with the remaining cup of shredded cheese and grated Parmesan. Bake in a preheated oven at 400°F / 200° for 30 to 35 minutes, until the cheese has melted and bubbling. 8:05 Top it off with fried bacon and garnish with chopped chives or parsley.
