Welcome back, dear friends! 🌟 Today, I'm thrilled to share with you a recipe that's been a game-changer in my daily routine: my favorite Avocado Lentil Salad! 🥑 This isn't just any salad; it's a delicious, nutritious powerhouse that helped me shed 10 kg! If you're looking for a meal that's both satisfying and healthy, you're in the right place. Ingredients: For the salad 1 bell pepper 9–10 cherry tomatoes 2 tbsp finely chopped onion 2 tbsp finely chopped parsley 1 cucumber 1 avocado 1 can lentils (or about 1½ cups cooked lentils) 1 tbsp lemon juice (for the avocado) For the dressing 3 tbsp olive oil 1 tsp mustard 1 garlic clove 1/2 tsp salt 3 tbsp reserved liquid from the canned lentils A small amount of fresh dill 1 tbsp lemon juice Instructions 1. Dice the bell pepper and halve the cherry tomatoes. 2. Add the onion and parsley to a large salad bowl. 3. Peel the cucumber, slice it into thin rounds, sprinkle with salt, and let it sit for 5 minutes. 4. Peel and slice the avocado. Drizzle with 1 tbsp lemon juice to prevent browning. 5. Drain the lentils, reserving 3 tbsp of the liquid for the dressing. Make the dressing 1. In a tall container, combine: olive oil mustard garlic salt reserved lentil liquid dill lemon juice 2. Blend with an immersion blender until smooth and emulsified. Assemble the salad 1. Squeeze excess liquid from the cucumber slices. 2. Add the cucumber, avocado, and lentils to the bowl with the vegetables. 3. Pour the dressing over the salad. 4. Toss gently until everything is evenly coated.
