In this recipe, we prepare Hake en Papillote, a gentle cooking technique that prevents the Maillard reaction in the protein, facilitating digestion and preserving the food's natural properties. We accompany the hake with colorful vegetables (red and green bell peppers, tomato, spring onions, and asparagus), because each color provides different nutrients. In this case, we do sear them beforehand, as this enhances their flavor without hindering digestion. We also use parchment paper to seal the papillote, a healthier and more environmentally friendly option.
