Smooth and Creamy BIBINGKA CHEESECAKE
Hello everyone! I hope you had a great year- let me share my first recipe for this year 2023, Bibingka Cheesecake! Bibingka is baked rice cake with coconut milk topped with cheese and salted duck egg and wrapped in banana leaves. It's a traditional favorite among the Filipinos and is usually served during Christmas. The fusion of cheesecake and bibingka made me curious so i decided to try this recipe and it did not disappoint- its soo yummy! RECIPE: ✅ CRUST 100 grams crushed graham crackers 30 grams dessicated coconut 30 grams sugar 60 grams melted unsalted butter ✅ CHEESECAKE BATTER 400 grams cream cheese, room temperature 100 grams sugar 200 grams coconut cream in can 150 grams heavy whipping cream 20 grams all purpose flour, sifted 2 large eggs 1 teaspoon vanilla extract ✅ TOPPINGS Red salted duck eggs Grated cheese BAKING TIME: 50-60 minutes BAKING TEMPERATURE: 180'C BAKING PAN USED: 7 inches round springform pan, lined with banana leaves OVEN USED: Convection oven ◾You will see a slight jiggle in the center of the cheesecake after baking but that is totally fine. It will eventually set after chilling in the fridge. ◾If you want to add more salted eggs and cheese in the filling, you may do so; before baking, pour half of the cream cheese filling first in the pan then put your sliced eggs and cheese, then pour the rest of the batter ◾Texture is really creamy, light, smooth and tastes great with the subtle hint of coconut because of the crust. It's a perfect combination of sweet and salty dessert. ◾You may also replace all purpose flour with cornstarch. ◾I recommend replacing the salted eggs on top with fresh ones before serving because they tend to become hard after chilling the cheesecake. Otherwise, you may leave them as is or add more. ◾Shelf life is 2 days only at room temperature, 1 week in cold storage.
