Neurio - Karanji – Christmas Kuswar Neurio is like Karanji with slight variations in the filling. Karanjis are made especially during Diwali, and Neurio are made during Christmas time In my opinion, Neurios are best made at home as the filling is fresh, fragrant & juicy, as far as I can remember we have never brought the readymade ones. The readymade variety is made weeks in advance and tastes rancid cause of the oil, and it is stuffed with only rava and sugar. It is a time-consuming process you have to make the filling, then the dough for the outer cover, then roll the dough stuff the filling and then frying. But back home it was fun as we all would sit together and do this, chit chatting laughing and arguing all at the same time. But now it is difficult as we all are away from home, and now everything has to be done single handed. But still, I enjoy doing it as it is, made only once a year. It brings back my childhood memories. For the outer cover 4 cups Maida (all-purpose flour) + extra for rolling Water for kneading the dough 2 tsp of oil salt to taste For the filling/stuffing 2 cups of desiccated coconut ¾ cup of sesame seeds ¾ cup of semolina / rava ¾ cup of poppy seeds (This is a must but it is not available here so I have used dry fruit powder) Pinch of salt 2 cups of sugar ( or as required) 1 tsp of cardamoms (Elaichi) powdered ½ cup of charoli ½ cup raisins ¾ cup of dry fruits powder ( cashew nuts, almonds and pistachios ) ( I have added this in place of poppy seeds) Oil for frying
