● Today I'm sharing a recipe for mini strawberry tarts: they're made with almond Breton shortbread cookies, a strawberry cream filling, whipped cream, and fresh strawberries—a lovely idea for Mother's Day, for example! ● Ingredients for the recipe (for 8 to 9 small tarts): ● For the almond Breton shortbread: 170g butter 2 egg yolks 90g icing sugar 125g flour 80g ground almonds 2 pinches of salt ● For the strawberry cream: 150g heavy cream (35%) 110g "Inspiration Fraise" chocolate (Valrhona) 75g strawberry puree 1.25 sheets of gelatin (2.5g) 4g glucose syrup ● For the vanilla whipped cream: 100g heavy cream (35%) 15g icing sugar 1 tsp.
