Today Karlos Arguiñano shows you how to prepare lamb with garlic potatoes using a sliced leg of milk-fed lamb, crispy fried potatoes, and a garlic and vinegar marinade that gives it a spectacular flavor. 🍖🥔 ✅ Easy Lamb ✅ Golden Potatoes and Tender Meat ✅ Garlic and Vinegar Marinade at the End ✅ In 45 Minutes 📝 INGREDIENTS (Serves 4): 1 sliced leg of milk-fed lamb (approx. 1 kg) 2 potatoes (for frying) 6 cloves of garlic 1 tablespoon of vinegar Extra virgin olive oil (enough for frying) Salt, pepper, parsley 👨🍳 STEP BY STEP: 1. Fry the potatoes: Heat plenty of oil (about 400 ml) in a frying pan. Peel the potatoes, roughly chop them, season them, and fry them over medium heat for 15 minutes. Remove and set aside. 2. Cook the lamb: Transfer half the oil to a larger frying pan. Cut each lamb fillet into 2-3 pieces, season with salt and pepper, and fry over high heat for 10-12 minutes. 3. Prepare the garlic sauce: Peel and mince the garlic, then crush it in a mortar and pestle. Add the vinegar and mix well. 4. Combine everything: Spread the garlic sauce over the meat and gently shake the pan. Add the fried potatoes, sprinkle with chopped parsley, and cook over medium heat for 3-4 minutes. 5. Serve: Garnish with parsley leaves. 💡 KARLOS' TIPS: Fry the lamb in batches, without overcrowding the pan, so it browns nicely on the outside while remaining juicy inside. ❓ WHAT'S THE DIFFERENCE BETWEEN SUCKLING LAMB, SEASON LAMB, AND EASTER LAMB? Suckling lamb (5-8 kg): the youngest, fed exclusively on its mother's milk. Tender, delicate, and mild meat. Season lamb (9-12 kg): firmer, with a more pronounced flavor. In Aragon, it has Protected Geographical Indication status.
