Risotto met kokosmelk en scampi

Dit gerecht is gemakkelijk te maken en ongelooflijk smaakvol. Serveer onmiddellijk zodat de risotto lekker warm blijft. -------------------- Ingrediënten voor 4 porties: 200 g risottorijst (arborio of carnaroli) zout 2 eetlepels olijfolie 2 koffielepels geraspte limoenschil 25 cl kokosmelk 35 cl visbouillon (water + bouillonblokje) 1/2 rode thaise peper 1 takje citroenmelisse 1 sjalot 1 zakje diepgevroren scampi’s "365" Peper van de molen Bereidingstijd: 30 min. Verwarm de visbouillon met het in vier gesneden takje citroenmelisse en hou warm. Hak de sjalot en de peper fijn. Fruit ze in een stoofpan met de olie. Voeg de rijst toe en roer gedurende 2 minuten. Voeg al roerend een pollepel bouillon toe en voeg een andere toe van zodra de vloeistof geabsorbeerd is. Laat een vijftiental minuten verder koken en voeg pollepel na pollepel bouillon toe. Pel ondertussen de vooraf ontdooide scampi. Giet de kokosmelk in de stoofpan, breng aan de kook en voeg de scampi toe. Laat nog 5 minuten sudderen.
