In this vegan cookie video, you have plenty to choose from. One is a raw vegan cookie, another is a healthy one, and the last is a vegan indulgence cookie, but we know that all of them will not only satisfy your appetite but also help many people on this planet. The instructions are easy and the ingredients are simple, so let's get baking! COOKIE 1. Raw Vegan Chocolate Cookie: 1. Soak 8 Medjool dates for at least 30 minutes, then create a date paste by draining and blending them. 2. Blend the following ingredients in a food processor, shape into round cookies, and refrigerate: 100g raw macadamia nuts 80g raw cashew nuts 80g raw almonds Half of the date paste you made earlier 1 tsp Himalayan salt 3. Let's make the chocolate cream! This will be the filling for our cookies. Blend: The remaining half of the date paste we set aside earlier 10g of raw walnuts 1 tbsp of raw cocoa powder 1/2 avocado 4. Take the cookies out of the refrigerator and fill them with the chocolate cream, and you're done! COOKIE 2. Vegan "Healthy" with Raisins The simplest one! It's somewhere between the other three cookies we're showing you. It's easy, quick, sugar-free, oil-free, you don't need many ingredients, and it's also very healthy. And if you want to make it gluten-free, buy gluten-free oats. You just have to mix the following ingredients and bake for 20 minutes. At 180ºC: 1 banana (250g with peel, more or less) 1 1/2 cups of oats (approx. 100g, until the mixture is moldable) 1/2 cup of raisins (approx. 60g) 1/2 tbsp cinnamon The great thing about these cookies is that you can vary the ingredients if you always use banana (or applesauce, you can also use that) and oats. You can add nuts, seeds, chocolate, or other dried fruits, and they turn out wonderfully! COOKIE 3. Chocolate "Vegan Fatty" Cookies These cookies will captivate anyone, and no one will be able to say they're 100% vegan; they're incredibly flavorful. You can try filling them with banana or oat ice cream, and they're spectacular. Be warned, they're addictive! First, mix the dry ingredients in a bowl: 1 1/2 cups whole wheat flour (150g) 1 tsp Himalayan salt 1 tsp baking soda In a separate bowl, mix the following ingredients: 1 cup panela (140g) 1/2 cup melted coconut oil (80ml) 1/2 cup plant-based milk (60ml) We used coconut milk, yes! We love the combination of cocoa and coconut. 1 tsp apple cider vinegar Gradually add the dry ingredients to the bowl while stirring. Add: 100g chopped dark chocolate Let the mixture rest in the refrigerator for 30 minutes. Then, line a baking sheet with parchment paper, form small balls with the mixture, and place them on the sheet, leaving space between them so they don't become giant cookies. Bake for approximately 15 minutes. Bake until they double in size. When you take them out of the oven, let them rest until they cool and harden, at least 5 minutes. And enjoy!
