Its vibrant colors make it a perfect appetizer for guests or a delightful dish for a holiday brunch. . ■Prep time 15 minutes ■Ingredients (Serves 2) Salmon: 100g Salt [A] Avocado: 1 [A] Lemon juice: 1 tsp [A] Salt: 1 pinch Water: 1L [B] Wholegrain mustard: 1 tsp [B] Olive oil: 1 tbsp [B] Lemon juice: 2 tsp [B] Honey: 1 tsp [B] Salt: 2 pinches Egg: 1 Italian parsley . ■Instructions [Preparation] Peel and pit the avocado. Sprinkle both sides of the salmon with salt, let it rest in the refrigerator for about 10 minutes, then rinse it well with water and pat it thoroughly dry with a paper towel. Bring 1L of water to a boil in a pot, then turn off the heat. Gently place the egg in the water and let it sit for 15 minutes. Remove the egg and place it in ice water to cool completely. In a bowl, combine the [A] ingredients and mash until a paste forms. In a separate bowl, whisk together the [B] ingredients. Spread the avocado paste from step 2 onto a plate. Arrange the thinly sliced salmon on top. Place the soft-boiled egg from step 1 in the center.
