The dough is rolled with a dough sheeter, lined into tart rings, and blind-baked before filling. After that, almond cream is piped into 14 pieces of 12cm tarts, 48 pieces of 9cm tarts, and 6 pieces of 21cm tarts. The surfaces are then smoothed to complete the preparation. The baking is handled by another staff member, so this is where my tart preparation work ends.
