Soak the soybeans for 8 hours. 2. Blend the soybeans and strain them through a bag or cheesecloth. Squeeze out the excess liquid to extract the okara. 3. Cook over medium heat until boiling. 4. Continue to simmer for 5 minutes. 5. Turn off the heat and let it cool to 70-80 degrees Celsius, then add the vinegar dissolved in 100 ml of water. 6. Let it rest for approximately 1 hour, then simmer over low heat for about 10 minutes, or until the milk curdles and separates from the whey. 7. Place it in a strainer bag and gently squeeze out the excess liquid. 8. Place the bag in a mold, and then place another container identical to the mold on top of a counterweight, along with a board and a pot of water. Let it rest for 1 hour. 9. Unmold it. To store, submerge it in clean water, cover it, and refrigerate for up to 3 days. TIPS: 1. Preheat the water left over from blending the tofu. 2. Skim off any foam. 3.
