Smörbollar -- Swedish "Butterball" Cookies

There are actually two different dishes called Smörbollar. The first is this one (a kind of cookie), and the second is a variation on the kardamummabollar, or Cardamon Rolls. These soft, rich cookies are quite sweet, and buttery but they are still a wonderful part of a general Christmas cookie spread. worth putting in the effort to make! Recipe: makes 16 cookies ---------------- 150 g butter (softened, a little less than a stick and a half) 2 egg yolks 40g (a scant 1/4 cup) sugar 152 g flour (1 1/4 cup) 3.5 tsp vanilla sugar (can put in sugar and some vanilla extract, maybe 1/4 tsp) ideally pearl sugar for rolling, but can use regular sugar or even omit Cream butter and sugar together Add in egg yolks and mix well. Work in flour Form balls and roll in the pearl sugar. Bake at 200C/400F for 5-7 min. Eat at room temperature.
