The Torres family is rolling out the red carpet and pulling out all the stops to welcome a master of Spanish gastronomy: Pedro Subijana. What a turbot they're going to prepare for us! Pil pil is a sauce made with oil, chili peppers, and garlic, which must be piping hot when served. Cooking pil pil is a true art. It consists of obtaining a gelatinous substance by first confiting the cod in plenty of olive oil. This confiting process is what produces the distinctive sound that gives it its name. Although we usually eat it with cod, today we're going to prepare a turbot pil pil. Ready?
