I roast it with sliced potatoes, Zalla red onion, and add a Bilbao-style sofrito that I then thicken to obtain a wonderful pil-pil sauce that completely coats it. This recipe is one of my specialties; it's perfect for a special meal, a celebration, or simply because you deserve it—you have to treat yourself now and then. Turbot is one of the most prized white fish, thanks to its delicate yet firm white flesh with a gelatinous texture. It has an extraordinary flavor and lends itself to a multitude of wonderful recipes, like the one I'm sharing with you. It's a very simple recipe that requires hardly any preparation. The oven does all the work for you, and in less than an hour you'll have the perfect turbot ready to enjoy. Just ask the fishmonger to remove the entrails.
