It's very simple to prepare. Peel the eggplants, cut into small cubes, and place in a deep bowl (for easy mixing). Lightly beat 4 eggs (for the number of eggplants) with a whisk and pour into the bowl with the eggplants. Mix thoroughly. Repeat mixing 3-5 times until the eggs are completely absorbed. DO NOT USE SALT!!! Fry the onion with a pinch of sugar until slightly translucent. Then fry the eggplants until browned (be careful not to overcook them!) Place on a platter and let cool slightly. Sprinkle the WARM eggplants with salt, pepper, and spices to taste.
