How to Harvest and Cure Sweet Potatoes || Black Gumbo

It's time to harvest our sweet potato crop. We planted a 4x5 square foot bed of sweet potato slips back at the beginning of June, along with a tupperware bin filled with potting soil. It's been a hundred and fifty days, and in many climates that would be plenty of time to harvest a gigantic crop of delicious sweet potatoes. But in my area, sweet potatoes take their sweet time. They have plenty of warm weather to continue to grow foliage and blossoms, and they do not have the climate indicators that tell them to begin shutting down foliage production and begin packing away carbohydrates in the roots. I could wait for that time, that would be somewhere around mid-December in my zone. But I need my beds for other crops. So let's harvest sweet potatoes, I'll tell you how to cure them as well.
