Harvesting and Curing Sweet Potatos

Sweet potatos need to be cured for 7 to 14 days after harvesting to harden skin for storage, heal any damage and convert starches to sugars for that Sweet taste. To cure they must be kept at roughly 85⁰ F with 90 to 95% humidity durring this time. Curing is complete when potatos are moist but much harder than when first dug. After this curing they go into cool storage for 6 weeks for increased sweetness. You can eat them without this step but for best flavor store well ventilated at temperatures between 55⁰ and 60⁰ F durring this time.
