From the Bimber Distillery website: ​ King's Cross St. Pancras Cask Ref. 129 This single cask release drawn from an AMERICAN OAK EX-BOURBON CASK celebrates King’s Cross St Pancras station. Kings Cross was opened on the 10th January 1863 and today serves as a busy interchange between six Underground lines. Constructed close to a former industrial area, the location has been extensively redeveloped and is now home to boutique shops, galleries, bars and fashionable eateries. NOSE: Charred peaches, freshly sliced red apples and a side of pineapple cream is joined by luscious toffee and aromatic, charred, floral oakiness. PALATE: A silky arrival offering ripe apricots, pineapple cubes and whipped cream. Chocolate mousse and evolving pepperiness develop alongside toffee, vanilla and baking spices. FINISH: Exceptionally long with piquant spicing and metholated oak. For The Spirit of the Underground Collection, Bimber’s team have selected from our finest London single malt whisky casks.
