Thailand is fortunate to have a very high level of biodiversity in freshwater fish, with more than 40 species of freshwater fish that are commonly eaten. These range from snakehead fish, tilapia, catfish, carp, minnows, to silver carp. Each species has its own unique characteristics; some have delicious skin, while others have tender flesh. This diversity reflects the abundance of water resources in Thailand's past. The diverse menus featuring freshwater fish offer unique and delicious flavors that reflect the abundance we should all protect.
