VEGAN KETO - WHAT I EAT IN A DAY

What I eat in a day on the vegan keto diet and my thoughts on the diet after trialling it for a few days! ♡ Meals & Recipes: Keto Porridge: Equal parts (start with a couple of tablespoons of each): Chia seeds Hemp seeds Flax meal Plus shredded coconut if you like it Add almond milk (unsweetened) until it makes a thick porridge consistency and leave overnight in the fridge. Add more almond milk as required. Cheesy Tofu Salad: A base of kale and spinach 1 tbsp of pumpkin seeds 1 Brazil nut, chopped 1/2 pack of firm tofu - cubed and baked in the oven for 15 minutes 1 tbsp turmeric kimchi 1 avocado 2 tbsp nutritional yeast Generous amounts of pink salt and pepper Top with 15g flax seed oil when you are ready to serve Flax tortillas: 50ml water 35g flax meal Bring the water to the boil, add the flax meal and stir until it starts to come away from the sides of the pan. Leave it to cool whilst you heat up a little oil in a frying pan. Fry for around 5 mins on each side. Leave to cool before serving with mashed avocado, chilli flakes, pink salt and pepper.
