The bell pepper is a Latin American product with varieties ranging from sweet to spicy, and is considered a very healthy condiment. The bell pepper (Capsicum annuum L.) belongs to the Solanaceae family and is native to Latin America, particularly Bolivia, Mexico, and Peru, where it exhibits the greatest diversity. In Argentina, it is grown in several areas with diverse agroecological conditions, from the North to the South, both in the field and under greenhouses. There are sweet and spicy varieties of Capsicum annuum. In general, the sweet ones can be rectangular (the Spanish or Lamuyo variety is the most widely grown, especially under greenhouse conditions), quadrangular (bell pepper, four-shell, or Blocky), heart-shaped (Calahorra), elongated (vinegar-like), and recently, a new commercial type called Snack (small, extremely sweet peppers between 7 and 10 centimeters long) has appeared.
