Ingredients: 3 eggs salt to taste 300 ml kefir or natural yogurt 200 g flour 1 tsp baking powder young cabbage 1 onion a little olive oil 1 carrot 2 tbsp yogurt for the sauce approx. 20 g mayonnaise 1 clove of garlic 1 cucumber optional: other herbs and spices to taste Preparation: Crack the eggs into a bowl, add a little salt and whisk thoroughly. Add kefir or yogurt and mix everything into a smooth mixture. Mix the flour with the baking powder, gradually sift it into the liquid and stir until a homogeneous dough without lumps is formed. Finely slice or shred the young cabbage. Dice the onion into small cubes. Heat some olive oil in a pan. Add the cabbage and onion and sauté over medium heat for 3-5 minutes, until the vegetables are soft. Grate the carrot coarsely or finely and add it to the vegetables in the pan, fry for another 3-5 minutes. Stir the fried vegetables into the batter and mix everything well. Season with salt or spices to taste, if needed. Sauce: For the sauce, mix yogurt, mayonnaise and finely chopped or pressed garlic in a small bowl. Heat a little olive oil in a clean pan and gently warm the sauce for 3-4 minutes, stirring constantly (do not let it boil vigorously). Cut the cucumber into small cubes or half-rings and mix into the sauce. To fry: Heat olive oil in a pan. Form small pancakes or patties from the vegetable batter and fry them over medium heat until golden brown on both sides. Each round only takes a few minutes. Serve the finished vegetable fritters with the yogurt sauce. These pancakes taste great both warm and cold, are a perfect accompaniment to a light dinner or a hearty breakfast, and are a great addition to a balanced diet.
