Ingredients: 2.5 lb ground beef 2 cups rice eggplants 1 chopped onion 1/2 cup olive oil 6 oz tomato paste Juice of 2 lemons (add more to taste) Salt and pepper to taste Preparation: Remove the leaves and cut off the ends of each eggplant. Place the eggplant ends in salted water. With a knife, scoop out the inside of the eggplant. Place the eggplants in a bowl of salted water. In a large bowl, mix the ground beef, rice, the scooped-out eggplant flesh, onion, olive oil, lemon juice, 3 oz tomato paste, salt, and pepper. Stuff the eggplants, but don't pack them too tightly. Use the cut ends to seal the eggplant. With the leftover meat, make a broth with 2 liters of water, 3 oz of tomato paste, the juice of 1 lemon, salt, and pepper.
