Hake and Shrimp Meatballs in Sauce: 🛒 Ingredients (24 pieces): 🔸 500 g hake fillets (1 lb) 🔹 200 g frozen shrimp (7.1 oz) 🔸 1 egg 🔹 3-4 tablespoons breadcrumbs (3-4 tbsp) 🔸 A handful of chopped fresh parsley 🔹 1 teaspoon salt (1/2 tsp) 🔸 Pepper 🔹 Flour For the sauce: 🔸 1 onion 🔹 70 g leek (3/4 cup) 🔸 2 small carrots 🔹 1 clove of garlic Garlic 🔸 1 tablespoon tomato paste (1 tbsp) 🔹 30 g all-purpose flour (3 tbsp) 🔸 100 ml white wine (⅓ cup + 1 tbsp) 🔹 300 ml vegetable stock (1 1/2 cups) 🔸 125 ml water (1/2 cup) 🔹 Salt 🍳 Hake and Shrimp Meatball Recipe in Sauce, Step by Step: 1️⃣ Remove any bones from the hake fillets. Pat them dry with paper towels. Cut them into pieces and chop them in a food processor. Dry the shrimp thoroughly and chop them as well. 2️⃣ Place the chopped hake and shrimp in a bowl. Add the salt, pepper, chopped parsley, and egg. Mix everything very well and incorporate the breadcrumbs as needed to achieve the right consistency. Cover with plastic wrap and refrigerate for 1 hour to firm up. 3️⃣ Meanwhile, prepare the sauce. Peel and dice the carrot. Chop the leek, onion, and garlic clove. 4️⃣ In a saucepan, add about 3 tablespoons of olive oil (2 tbsp). Heat over medium heat and add the garlic clove. After cooking for 1 minute, add the onion and leek. Once softened, add the carrot. Sauté for a couple more minutes and add the flour. Mix well to cook. Then, stirring constantly, add the wine, stock, water, and tomato paste. Once it starts to boil, reduce the heat and simmer for 20 minutes. 5️⃣ Blend the sauce. Taste it and add salt as needed. If you prefer a very smooth sauce, you can strain it. 6️⃣ Remove the meatball mixture from the refrigerator. Moisten your hands and form small balls with a tablespoon of the mixture. Roll them in flour and shake off the excess. 7️⃣ Heat a pan with a couple of fingers' worth of olive oil. When hot, fry the meatballs in batches of 5 until golden brown. Place them on a plate lined with paper towels to absorb the excess oil. 8️⃣ In a large pan, pour the sauce and the meatballs. Simmer for 10 minutes, stirring occasionally. Enjoy!
