Chop the garlic cloves. 2️⃣ In a large skillet, add the oil and garlic cloves. Cook over low heat until they begin to brown. At this point, add the onions along with a little salt. Sauté over medium-low heat until very tender and amber-brown. It will take a while, at least 30 minutes, but the well-caramelized onion is what elevates this recipe and makes it heavenly. 3️⃣ Meanwhile, clean the squid (you can ask your fishmonger to do it for you if they're fresh). Mine are between 6 and 8 cm (2.3 and 3.1 inches), so I simply cut them in half. If they're large, cut them into 3 or 4 cm (1.1 or 1.5 inch) slices. 4️⃣ When the onion is ready, increase the heat, make a well in the center, and add the squid. Sauté for two or three minutes. When they're ready, add a pinch of salt. Then, add the tomato and stir it in with the rest of the ingredients. 5️⃣ Pour in the white wine and fish stock. Stir again and cover with the lid. Let it simmer over low heat for 30 minutes after it comes to a boil (check that the squid is tender; if not, let it simmer for a little longer). If there's too much stock left, let it simmer uncovered for a few minutes to let it evaporate. When it's reduced and thickened, it's ready. 6️⃣ Let the squid with onions rest covered for 5 minutes before serving. You can serve them with rice, potatoes, or bread to dip in the wonderful sauce. 👌 Notes for making the squid in sauce recipe: 🧅If you use cuttlefish, you'll likely need more cooking time to make it tender.
