Gastronomie : côte de porc et jardinière de légumes

Nous commençons cette semaine en Bourgogne avec dans nos assiettes, une côte de porc fermière accompagnée d’un cortège de petits pois, asperges et champignons. Une recette simple, réalisée par un meilleur ouvrier de France, et à cinq euros par personne s’il vous plaît.  Ingrédients : Côte de porc Petit pois Carotte Champignon Asperge Lardons de poitrine fumée Huile de pépin de raisin -Huile d’olive Échalote Beurre Sel et poivre Livèche Recette : 1. Éplucher les légumes. 2. Cuire la côte de porc 15 minutes dans de l’huile de pépin de raisin. Ajouter des échalotes et une noisette de beurre. 3. Faire revenir 5 minutes les asperges dans de l’huile d’olive. Ajouter un fond d’eau. Incorporer les carottes, les lardons puis les petits pois. 4. Précuire les champignons 2 minutes.
