Remove the picanha from the pan and let it rest for two minutes, reserving the melted fat from the pan. Portion the picanha into cuts of the desired size, remembering that the larger the cut, the longer it will take to cook to reach the desired doneness. Now, with the pan very hot, return the picanha steaks to the pan with a spoonful of the reserved fat, sealing both sides of the meat very well; remove the steaks from the pan and let them rest for three minutes before cutting.
