Vegetable pakoras. 🛒 Ingredients (about 35 servings): 🔸 200 g cabbage (7.1 oz) 🔹 100 g pumpkin (3.5 oz) 🔸 100 g chickpea flour (⅔ cup) 🔹 15 g rice flour or cornstarch (1 tbsp) 🔸 60 ml water (¼ cup) 🔹 1 teaspoon garam masala (1 tsp) 🔸 1 teaspoon turmeric (1 tsp) 🔹 ½ teaspoon hot paprika (½ tsp) 🔸 ½ teaspoon cumin (½ tsp) 🔹 10 ml olive oil (1 tbsp) 🔸 Salt Beetroot Sauce: 🔸 180g beetroot (6.4 oz) 🔹 20ml water (1 tbsp + 1 tsp) 🔸 30-40g Dijon mustard (2-3 tbsp) (depending on how spicy you like it) 🔹 5ml lemon juice (1 tsp) 🔸 Salt 🍳 Step-by-step recipe for Indian vegetable pakoras: 1️⃣ Finely chop the cabbage and squash. 2️⃣ In a large bowl, place the cabbage and squash. Add the dry ingredients. First, the spices: garam masala, turmeric, paprika, and cumin. Add a little salt, then the chickpea flour and rice flour. Mix everything well (I do it by hand). 3️⃣ Pour in the oil and water. Mix everything well again, until a smooth paste forms on the vegetables. 4️⃣ Heat a pan with plenty of oil (I use a wok). When it's hot, add small piles of the mixture, scooped with three fingers and not forming a ball. Turn them over so they brown all over. When they're toasted and crispy, remove them and place them on absorbent paper. 5️⃣ Prepare the sauce. Place all the ingredients listed in your blender and blend well until smooth. 6️⃣ Serve the freshly made pakoras with the sauce. 👌 Notes for preparing Indian vegetable pakoras: 🍁You can easily substitute the pumpkin for carrots. 🍁If you don't have garam masala, you can add half a teaspoon of curry powder. 🍁If you don't like spicy food, leave out the paprika.
