Best Chicken Kaleji Curry Recipe | Soft, Tender, and Smell-Free
Discover the secrets to preparing a Best Chicken Kaleji Curry that's both flavorful and free from the strong liver odor. Ingredients: To Clean & Boil Kaleji : Kaleji (Goat Liver) – as required Vinegar – 2 tbsp (for washing) Water – as needed (for washing & boiling) Coriander Powder – 2 tsp Turmeric (Haldi) – 1 tsp Garlic Cloves – 15 to 20, chopped To Grind (Make Masala Paste): Garlic – 1 whole bulb Dry Red Chilies – 4 Ginger – 2-inch piece Coriander Seeds – 2 tsp Cumin Seeds (Jeera) – 1 tsp Black Pepper Seeds – ½ tsp Tomatoes – 2 small Onion – 1 medium Green Chili – 1 Mint Leaves – a handful Fresh Soya Leaves – a handful 👉 Grind all the above into a smooth paste. For Cooking: Oil – 150 g (about ¾ cup) Bay Leaves (Tej Patta) – 2 Onion – 100 g, finely chopped Ground Masala – (from above) Turmeric – ½ tsp Kashmiri Red Chili Powder – 1 tsp Red Chili Flakes – ½ tsp Coriander Powder – 1 tsp Garam Masala – 1 tsp Cumin Powder – ½ tsp Salt – to taste Curd (Yogurt) – 1 cup, whisked Water – ½ glass (for masala) Green Chilies – 2 (whole or slit) Final Touch: Boiled Kaleji (from earlier step) Fried Onion (optional – for garnish or added flavor) Water – 1 glass (for gravy) Fresh Coriander Leaves – chopped (for garnish) 🔪 Instructions: 1. Prepare the Kaleji: _Wash kaleji with water and vinegar to remove impurities. _Boil kaleji with water, coriander powder (2 tsp), turmeric (1 tsp), and 15–20 chopped garlic cloves. _Cook until liver is no longer raw and the smell is gone. Drain and set aside. 2. Prepare the Masala Paste: _Blend all grinding ingredients (garlic, chilies, ginger, seeds, herbs, tomatoes, onion) into a smooth paste. 3. Cook the Masala: _Heat oil in a pan. _Add bay leaves and chopped onions. Fry until golden brown. _Add the ground masala paste. Cook on medium heat for 3–5 minutes, stirring. 4. Add the Spices: _Add turmeric (½ tsp), Kashmiri chili powder, chili flakes, coriander powder, garam masala, cumin powder, and salt. _Mix well and sauté for 1–2 minutes until oil starts to separate slightly. 5. Add Curd & Water: _Lower heat, add whisked curd and ½ glass water. _Stir continuously to avoid curdling. _Cook the masala mixture for about 5 minutes. 6. Combine Kaleji: _Add 2 whole green chilies. _Add the boiled kaleji and mix well. _Optionally add fried onions here for deeper flavor. _Cook until oil begins to separate from the masala. 7. Make the Gravy: _Add 1 glass of water. _Cook on medium flame for 5–10 minutes, depending on the consistency you want. 8. Finish & Garnish: _Once the oil floats on top and the kaleji is well-cooked, turn off the heat. _Garnish with fresh coriander leaves. 🍽️ Serving Suggestion: Serve hot with naan, paratha, or steamed rice. A wedge of lemon on the side enhances the flavor.
