The beef, packed with flavor from a unique blend of red and white miso, is tender and falls apart, yet has a light aftertaste. The broth permeates the tofu and green onions, making it a dish that pairs well with rice. Another appealing feature is the ability to change the flavor with shichimi (seven-spice seasoning). The restaurant also offers a stir-fried liver with chives set meal, made with fresh liver sourced from a Hofu butcher. The thick, surprisingly tender liver with no odor, combined with the sweetness of the chives, creates an addictive flavor. This set meal will give you a boost of energy starting from lunchtime.
