Heat for 2 minutes. Pour in the Half & Half and mix well. Heat mixture for about 5-10 minutes or until milk has thickened. Add in the nutmeg. Keep stirring to prevent burning milk on bottom of the pan. Turn off the burner and mix in the cheddar cheese and mozzarella cheese. Preheat the oven to 425F. Next, melt 2 tablespoons butter and 1 tablespoon olive oil on medium heat in a heavy skillet. Add the onion, celery, and bell pepper to skillet and sauté until the vegetables are softened. Add in the minced garlic, shrimp, and sprinkle salt, black pepper, and Tony’s. Cook until shrimp are pink - just a few minutes. Finally, mix the shrimp mixture into the cheese sauce using a slotted spoon. Prepare a casserole dish(es) by spraying with oil. Spoon equal portions into the dishes. Top with more cheese. Bake for 20-25 minutes until bubbly and brown on top. Garnish with chopped green onions. Allow to sit for 5 minutes or so before serving. Enjoy with a baked potato or hot buttered rolls. You can also use this recipe for a hot shrimp dip with crackers or French bread rounds.
