Murgh Khurchan Recipe & Mumbai Tawa Fish Recipe | 21 Nov 24 | | Masala Mornings | Shireen Anwar | MasalaTv Murgh Khurchan Recipe Ingredients: 500g Boneless Chicken (cut into thin fillets) 1 tbsp + 1 tbsp Ginger Garlic Paste 1 tsp + 1 tsp Chili Powder 1 tbsp Tandoori Masala 1 tsp Salt 2 tbsp Lemon Juice 1 tsp Dried Fenugreek 2 tbsp Chopped Garlic 2 tbsp Ginger Julienne 1 + 1 Sliced Onion 1 Sliced Tomato 8 Cashew Nuts ¼ tsp Turmeric 4 tbsp Yogurt 2 tbsp Cream 1 Capsicum Julienne 1 tsp Coriander Powder 1 tsp Cumin Powder 1 tsp Allspice ½ tsp Black Pepper ½ tsp Chat Masala Pinch of Orange Color 3 tbsp Chopped Coriander 2 oz Butter Method: Marinate the Chicken: Cut the chicken into thin fillets. Marinate with half of the ginger garlic paste, chili powder, tandoori masala, salt, lemon juice, and dried fenugreek. Add a Dum of coal for a smoky flavor, and let it marinate for 30 minutes. Prepare the Base: In a pan, heat ½ cup water, adding salt, turmeric, sliced onion, tomato, cashew nuts, and chopped ginger garlic. Cover and cook until soft. Turn off the heat, then add yogurt and cream. Blend this mixture into a fine paste. Cook the Chicken: Heat oil on a tawa. Cook the marinated chicken until done. Remove the chicken and shred into pieces. Sauté Vegetables: In the same oil, fry the sliced onion and capsicum on high heat. Add in the cooked chicken pieces and fry for 1 minute. Prepare the Sauce: In the same oil, cook half of the prepared base. Sauté it, then add chili powder, nutmeg powder, cumin powder, allspice, black pepper, salt, and orange color. Add ¼ cup of water and fry until oil rises to the top. Combine & Finish: Mix the fried chicken and veggies with the sauce. Add chat masala, butter, and chopped coriander. Garnish with fresh chopped coriander. Serve: Serve the Murgh Khurchan with naan for a perfect meal. Mumbai Tawa Fish Recipe Ingredients: 1 kg Fish (such as Bombay Duck, Kingfish, or your choice of firm fish) 3 Ginger slices 10 Garlic cloves 2 Green chilies 2 tsp Chili powder 1 tsp Crushed red pepper ½ tsp Black pepper 1 tsp Coriander powder ½ tsp Roasted and crushed Cumin ½ tsp Allspice ½ tsp Turmeric 6 Curry leaves 2 tbsp Coriander leaves (chopped) 1 ½ tsp Salt 2 tbsp Corn flour Method: Prepare the Marinade: In a blender, combine ginger slices, garlic cloves, green chilies, chili powder, crushed red pepper, black pepper, coriander powder, roasted and crushed cumin, allspice, turmeric, curry leaves, chopped coriander leaves, salt, and a little water. Blend into a smooth paste. Marinate the Fish: In a bowl, mix the prepared paste with corn flour. Coat the fish pieces one by one with the mixture and let them marinate for 1 hour. Cook the Fish: Heat oil on a tawa (griddle) over medium heat. Fry the marinated fish pieces until golden brown and crispy on both sides.
