Emeril's easy technique for roasting garlic will help kick up the flavor in your kitchen. Not only does it make for a delicious appetizer spread, but it's a great addition to pizza, sauces, potatoes, and meats! ROASTED GARLIC MAKES 3 TO 4 HEADS 3 to 4 heads garlic, upper quarter removed 4 teaspoons olive oil Coarse salt Freshly ground black pepper Fresh herbs, optional Preheat the oven to 350 degrees. Place the garlic on a foil-lined baking sheet and drizzle 1 teaspoon of oil into the top of each head. Sprinkle lightly with salt, pepper, and fresh herbs, if desired. Wrap in foil and bake until cloves are soft and golden brown, about 1 hour. Remove from the oven and let sit until cool enough to handle. Squeeze each head over a small bowl to expel the roasted cloves. Set aside until needed. Recipe courtesy Emeril Lagasse, copyright Martha Stewart Living Omnimedia, LP., all rights reserved.
