INGREDIENTS oil 1/2 cup black peppercorn 7 bay leaves 2 cinnamon stick 1 piece black cardamom 1 green cardamom 2 cloves 4 liver 1/2 kg ginger paste 1 tablespoon garlic paste 1 tablespoon onions golden brown 1/2 cup (crushed) red chili powder 1 teaspoonful coriander powder 2 teaspoons turmeric powder 1/2 teaspoon whole spice powder 1/2 teaspoon cumin seeds 1 teaspoon yogurt beaten 1/2 cup salt 1 teaspoon coriander leaves few for garnish METHOD In a pan put oil, and add black peppercorns, bay leaves, cinnamon stick, black cardamom, green cardamom and cloves. Cook till release aroma. Add liver(beef or mutton) put ginger and garlic paste and cook for 10 minutes on high flame stirring continuously. Now add onions, red chili powder, coriander powder, turmeric powder, all spice powder, cumin seeds, yogurt and salt, mix well cook covered for 30 to 40 minutes on low flame till liver is soft and tender and oil separates.
