Beef Albondiga Soup with Vegetables

Albondigas is a traditional Mexican meatball soup, served in light or hearty tomato sauce with various vegetables. There are many variations of this recipe, and today I will share my way on how to prepare this delicious soup! #albondigas #beefalbondiga Albondiga Ingredients: 2 Lbs Lean Ground Beef 2 Garlic Cloves 1/4 Onion 1/4 Cup Finely Minced Cilantro 1 Tsp Black Pepper 1 Tsp Salt 1/4 Tsp Cumin 1 Cup Pork Panko or Bread Crumbs 2 Large Eggs 1 Cup White Rice Sauce Ingredients 12-13 Cups of Water 6-8 Roma Tomatoes ( I used 6 in the video and ended up using 8 ) 1 Serrano Pepper (optional) 1 Chile Guajillo 3-4 Chipotle Peppers with 2-3 Tbsp of the Adobo (also optional) 2-3 Garlic Cloves 1/4 Onion 1-1 1/2 Cups of Water, Chicken, or Beef Broth 2-3 tbsp Chicken, Tomato, or Beef Bouillon (I used Chicken) Handful of Cilantro Vegetables: 3-4 Carrots 3 Potatoes 2 zucchini 1 Large Chayote Squash You can also add or remove any other vegetables of your choice! Ingredients for Rice 2 Cups Long Grain White Rice 1/2 Onion 1-2 Large Garlic Cloves 4 Cups of Water 1-2 Tbsp Tomato Bouillon Pinch of Cumin 1/3 Tsp Oregano Thank you for watching!
