On #CozinhaPráticaNoGNT, Rita Lobo teaches how to make this recipe that uses few ingredients and is ready in no time. #Cornbread #MinasGeraisCornbread #Recipes INGREDIENTS ⅓ cup (tea) of fine cornmeal ¾ cup (tea) of wheat flour ½ cup (tea) of milk ½ cup (tea) of water 2 tablespoons of sugar 75 g of unsalted butter 3 eggs (at room temperature) ½ teaspoon of salt 1 teaspoon of anise seeds PREPARATION METHOD Preheat the oven to 220 ºC (high temperature). Sift some cornmeal into two large baking pans to form a thin layer covering the entire bottom. In a medium saucepan, combine the milk, water, sugar, butter, fennel seeds, and salt and bring to a medium heat. Once the butter has completely melted and the mixture begins to boil, add the flour and cornmeal in a thin stream, stirring well with a bamboo spatula until a smooth dough forms. Continue stirring for about 2 minutes to cook the dough. Pay attention to the consistency: the dough should form a thin, dry film on the bottom of the pan. Turn off the heat and transfer the dough to the bowl of a stand mixer. Beat on low speed with the paddle attachment for about 5 minutes to cool down—this prevents the eggs from cooking when added and the dough from becoming runny. In a small bowl, crack one egg at a time and add to the dough, beating well after each addition—stop beating and scraping the sides of the bowl halfway through. After the last egg, beat for about 2 minutes, until a smooth and glossy dough forms. Using an ice cream scoop, remove a portion of dough and transfer it to the baking sheet (if you prefer, shape the cookies using 2 tablespoons). Repeat the process with all the dough, leaving a 3 cm space between each one — the cookies will expand considerably while baking. Sift cornmeal over the cookies — just a tiny amount, only to give it a finishing touch. Bake in the oven at 220 degrees Celsius for about 15 minutes, until the cookies are well puffed up — at this initial stage, the oven needs to be very hot to create steam inside the dough and make the cookie hollow. Reduce the oven temperature to 180 ºC (medium temperature) and bake for another 25 minutes, or until the cookies are golden brown and firm. Remove from the oven and serve immediately.
