Domowy ser edamski/ edam cheese

Edam - a type of semi-hard, rennet, ripening cheese, made from cow's milk, sometimes from goat's milk. He comes from near the Dutch city of Edam. It is produced in the form of flattened circles, but I made it in a cylindrical form. Edam is sold in a red, waxy coating, while I matured it for a natural crust for a change. Edam is similar to gouda cheese.
