This regional dish was created by the Mayor of Dijon between 1919 and 1935. It consists of pieces of chicken seared in a casserole dish and then brushed with a sauce made with Dijon mustard, Comté cheese, crème fraîche, and Burgundy white wine before being baked in the oven.
