A creamy zucchini and basil sauce, perfect for pasta, for making bruschetta (perhaps adding stracciatella, burrata, and/or diced fresh cherry tomatoes)... Or even for creating a delicious creamy sauce for scallops or strips of meat... In short, as always, let your imagination run wild! Ingredients: 350g zucchini 2 tablespoons grated pecorino cheese (Parmesan or Grana Padano are also fine) Salt to taste Extra virgin olive oil to taste A large bunch of basil (about 20 leaves, depending on your preference) 3 tablespoons cashews A powerful blender (not too large, an immersion blender is fine, but I prefer a traditional blender) Follow the instructions in the video and...
