This well-known Loire Valley restaurant, famous for having been the culinary creation ground of Jean-Claude Niqueux, was taken over in September 2020 by the couple Stéphanie Marques and Kevin Gardien. Entering the Michelin Guide directly in 2021 with a Bib Gourmand, it quickly regained the star in 2024 that its predecessors had lost in 2012! Kevin Gardien is a discreet chef, not necessarily seeking media attention to promote his restaurant. Yet, the cuisine he creates is well worth the trip, showcasing proven technical skill at the service of a well-controlled and flavorful creativity, often quite surprising in its choice of ingredients, which it elevates to new heights. This makes up for the few shortcomings we experienced during our previous lunch on November 24, 2022. Three set menus and an à la carte menu allow you to discover it. It was through the "Calder" tasting menu, priced at €104.00 for 8 courses, that we decided to explore and, above all, savor the experience. Without a doubt, this Michelin-starred restaurant offers the best value for money in the Centre-Val de Loire region, and perhaps even beyond, especially since the awarding of this distinction hasn't led to the "30% markup" imposed on customers by many competitors! Now, it boasts another advantage with the arrival three years ago of an experienced sommelier (whom I highly recommended), Roxane Rosenrib, formerly of Le Chapeau Rouge in Dijon, whose wine pairings are original and remarkably judicious!
