Spain may be out, but our World Cup recipe countdown continues! This week it's a Spanish omelette with chorizo. PREP: 10 minutes COOK: 30 minutes SERVES: 4 INGREDIENTS: 500 g new potatoes 1 onion, chopped 150 ml olive oil 3 tbsp fresh parsley, chopped 6 eggs 200 g chorizo, chopped STEP 1: FRY THE POTATO AND ONION Heat the oil in a pan, then add the potatoes and onions and cook for about 10-15 minutes, stirring the whole time. STEP 2: ADD THE CHORIZO Once the potatoes are soft, add the chopped chorizo and cook it down for a few minutes. STEP 3: DRAIN OFF THE OIL Pour the mixture into a colander over a bowl to drain off some of the oil, then tip it into a new bowl. STEP 4: RETURN TO THE PAN AND ADD THE EGG Tip about half of the reserved oil into a new pan, then return the mixture to the pan, press it down, then tip in the beaten eggs and top with some parsley, salt and pepper. STEP 5: FINISH IT UNDER THE GRILL Once it has cooked around the edges you can either flip it (risky!) or just pop it under the grill for a couple of minutes until firm.
