INGREDIENTS: 200 g Spinach Leaves 100 g Chopped Ham Half an Onion 1-2 Large Potatoes 5 Eggs 50 g Grated Cheese Nutmeg Olive Oil Salt and Pepper STEP 1: POTATOES Dice the potatoes and deep fry or bake in the oven until lightly golden, but not cooked through. STEP 2: COOK SPINACH Place the spinach in a large pan with 5ml of water, a large pinch of nutmeg and a pinch of salt. Set over a low heat. Put on the lid and allow wilt for a few minutes then remove from the heat. STEP 3: ONION Chop the onion and fry in a little oil until soft. STEP 4: MIX EGGS Beat the eggs in a large bowl and add the onions, spinach and fried potatoes. Season with salt and pepper. STEP 5: COMBINE TOGETHER AND CREATE OMELETTE Add oil to a frying pan over a medium heat. Add the omelette mixture and simmer for five minutes. Using a plate or lid, remove the omelette, turn it upside down and return to the pan. Alternatively, if you have a grill, you can use that to cook the top of the omelette. STEP 6: FINISH AND SERVE Finally, serve with some grated cheese on top and a small side salad.
