World Champion Bread โ hearty, moist, simply delicious. This bread thrives on its power: pure spelt flour combined with an aromatic seed mix of sunflower seeds, flax seeds, poppy seeds, and sesame seeds. The soaking of the seeds makes the bread exceptionally moist, keeps it fresh for longer, and gives it its characteristic nutty flavor. Wonderfully crispy on the outside, light and aromatic on the inside โ a true everyday favorite that not only satisfies but also brings genuine joy. ๐ฅโจ ๐พ World Champion Spelt Bread โ Thermomix ๐ฅฃ Ingredients 100 g mixed seeds (e.g., sunflower seeds, flax seeds, poppy seeds, sesame seeds) 100 g hot, but not boiling, water 300 g water 10 g fresh yeast 1 tbsp beet syrup 450 g spelt flour 150 g wholemeal spelt flour 12 g salt ๐ฉโ๐ณ Preparation (Thermomix) Mix the seeds with 100 g of hot water and let them soak for 20โ30 minutes. Add 300 g water, yeast, and beet syrup to the mixing bowl. Heat for 2 minutes at 37ยฐC on speed 2. Add the spelt flour, wholemeal spelt flour, salt, and the soaked seeds. Knead for 2 minutes on the dough setting. Place the dough in a greased and floured bowl and let it rise for 1 hour. Shape the dough into a loaf on a floured surface and roll it in seeds. Place it in a greased and floured ovenproof dish. Bake at 230ยฐC (450ยฐF) using conventional oven settings (top and bottom heat), with the oven rack on the lowest setting, for 60 minutes with the lid on (cold or hot oven โ both are possible). Optionally, bake for 5 minutes without the lid for an extra crust.
